Hot Water + White
Heron TEA = Happiness
How Much?
Most Black + Green Teas 1 tsp per cup (longer leaf teas use
closer to 1 tbsp per cup). White Teas + Herbals require
approximately 1.5 teaspoons to 1 tbsp per cup. Place
measured tea leaves in a loose tea infuser.
Water
Try to use filtered water if you do not have a mountain stream
at your disposal. For black teas, white teas and herbals
you are generally fine with boiling or close to boiling water.
Green teas are best infused with less than boiling water.
One tip is to soak your green tea leaves in a small amount of
filtered water for a minute or two. Then pour any
remaining cold water out before adding hot water. This
brings out more sweetness from the tea leaves (less
astringency).
How Long To Brew?
Steep most black teas for 3-4 mins, greens for 2-3 mins, white
teas and herbals 4-6 mins.
What Else?
YOU make the best cup of tea because YOU know how you like it.
If your tea is too strong, use cooler water, a little less tea
or a shorter
steeping time. If your tea is too weak, use more, hotter
water or a longer steeping time. Enjoy ~
Making Great Chai
Makes Four 8 ounce Cups
Heat 20 ounces of water in a small saucepan. Bring the
water to a boil and add:
2 Tbsp White Heron TEA Daybreak Masala Chai or
2 Tbsp White Heron TEA Ginger Mate Chai or
3 Tbsp White Heron TEA Red Bush Herbal Chai
Turn the heat down a touch and simmer for 4-5 mins. Add
your sweetener of choice (2 Tbsp organic sugar will do), 12
ounces of organic milk or soymilk. Simmer 3-4 more mins or
until chai is well heated.
The best chai will start to look slightly creamy or foamy on
top. When you get to this point, pour through a fine mesh
kitchen strainer into a 4 cup teapot and invite your neighbors.
Neighborly Note: If using soymilk, please don't even try
using lowfat. Lowfat soymilk has a hard time with heat and
you do want a good pot of chai, oui?
